Italian Spinach and Kale Salad

This salad is light, yet packed with nutrient-dense leafy greens. The tomatoes add a summer sweetness, the pepperoncinis add a tangy spice, and my Italian Vinaigrette recipe really brings every thing together.

Ingredients
Spinach and baby kale lettuce blend
Heirloom cherry tomatoes
Sliced pepperoncinis, finely minced
Croutons
Italian Vinaigrette, to taste
Directions
Chop spinach and kale blend into smaller strips, and add to a bowl. Since you get to decide how big or small this salad is, you can use an individual salad dish or a larger serving bowl. Add as much spinach and kale as you like. Add heirloom cherry tomatoes to the bowl to your preference. Take some sliced pepperoncinis and mince them into fine pieces. Add to the salad. Top with croutons, and serve with Italian Vinaigrette.
