Tomato Basil Gnocchi with Chicken Sausage

Tomato Basil Gnocchi with Chicken Sausage

In the summer months, I typically make this meal at least once a week. It’s fast, easy to make, and incredibly fresh tasting. With the herbaceous flavors of sweet basil, this one will have you hooked.

Ingredients

16oz shelf stable or frozen gnocchi
12oz Italian chicken sausage links, sliced
1 pint cherry or grape tomatoes, halved
1 oz fresh basil leaves, chiffonade
Shredded fresh parmesan cheese
Kosher salt
Fresh cracked pepper
Crushed red pepper
Olive oil


Directions

In a large skillet, heat a drizzle of olive oil and add your chicken sausage to the pan. Cook until it’s browned on both sides. Meanwhile, bring a pot of water to a boil and season with kosher salt and a drizzle of olive oil. Once boiling, add the gnocchi to the pot. When the gnocchi rise to the surface, you know they are cooked. Remove gnocchi from the pot and add it to the skillet along with another healthy drizzle of olive oil. This will prevent the gnocchi from sticking to the bottom of the pan. Combine the gnocchi with the chicken sausage, and allow the gnocchi to toast in the pan. Season generously with kosher salt and fresh cracked pepper.

Once the gnocchi is starting to show golden brown spots from toasting, add the tomatoes to the pan. Season the tomatoes with salt and pepper, and sprinkle the crushed red pepper into your skillet. Add as much or as little as you like. I prefer mine to be a little spicy, so I’m a bit more generous with it. Remove the skillet from heat fairly quickly after adding the tomatoes, so that they don’t become soggy. You want them warm, but still intact.

Top the skillet with basil and shredded parmesan cheese, and serve.
